Preparation and Baking
- Preheat your oven to 170ºC (340ºF) and line two 8-inch cake pans with parchment paper.
- In a large bowl, sift together flour, cornstarch, ground spices, baking powder, baking soda, and salt.
- Beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition until smooth.
- Gradually mix half the flour mixture into the wet ingredients, then add sour cream, vegetable oil, and vanilla. Finish mixing with the remaining flour.
- Divide the batter evenly between the cake pans and bake for 28-30 minutes or until a tester comes out clean.
- While the cakes cool, prepare the frosting by mixing the softened butter, powdered sugar, and brown sugar until creamy, then add cream cheese and vanilla bean paste, mixing until smooth.
- Once cooled, level the cakes, place one layer on a serving plate, frost generously, and top with the second layer. Finish with a thin layer of frosting on the sides.
