For the Cake
  • 1 cup Butter Room temperature
  • 1 cup Granulated Sugar Consider reducing if using very sweet frosting
  • 1 cup Brown Sugar Dark brown sugar intensifies sweetness
  • 3 large Eggs At room temperature
  • 2 cups All-Purpose Flour Sifted
  • 0.5 cup Cornstarch Can be omitted for a denser crumb
  • 1 tbsp Ground Spices Cardamom, Cinnamon, Ginger, Allspice, Nutmeg, Black Pepper; adjust to taste
  • 1 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 0.5 tsp Salt
  • 1 cup Sour Cream Can be substituted with Greek yogurt
  • 0.5 cup Vegetable Oil Can use melted coconut oil or butter
  • 1 tbsp Vanilla Extract Opt for pure extract
For the Brown Sugar Cream Cheese Frosting
  • 0.5 cup Butter Softened
  • 2 cups Powdered Sugar Sifted
  • 0.5 cup Brown Sugar Dark brown sugar for richer flavor
  • 8 oz Cream Cheese At room temperature
  • 1 tbsp Vanilla Bean Paste Extract can serve as a substitute

Method
 

Preparation and Baking
  1. Preheat your oven to 170ºC (340ºF) and line two 8-inch cake pans with parchment paper.
  2. In a large bowl, sift together flour, cornstarch, ground spices, baking powder, baking soda, and salt.
  3. Beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Add the eggs one at a time, mixing well after each addition until smooth.
  5. Gradually mix half the flour mixture into the wet ingredients, then add sour cream, vegetable oil, and vanilla. Finish mixing with the remaining flour.
  6. Divide the batter evenly between the cake pans and bake for 28-30 minutes or until a tester comes out clean.
  7. While the cakes cool, prepare the frosting by mixing the softened butter, powdered sugar, and brown sugar until creamy, then add cream cheese and vanilla bean paste, mixing until smooth.
  8. Once cooled, level the cakes, place one layer on a serving plate, frost generously, and top with the second layer. Finish with a thin layer of frosting on the sides.
