  • 1 large Avocado Ripe
  • 1 cup Fresh Cilantro Leaves Or parsley as substitute
  • 1/2 cup Plain Greek Yogurt Use non-dairy for vegan option
  • 1 tablespoon Lime Juice Freshly squeezed
  • 1 clove Minced Garlic Fresh is best
  • 1 teaspoon Salt Adjust according to taste
For Dipping
  • 1 bag Tortilla Chips Classic pairing
  • 1 box Seeded Crackers Nutty alternative
  • 1 medium Cucumber Sliced
  • 2 medium Carrots Cut into sticks
  • 1 medium Bell Pepper Sliced

Method
 

Preparation
  1. Bring a small pot of water to a boil. If using fresh edamame, cook for 3-5 minutes until tender, then drain and cool slightly.
  2. Gather all other ingredients: ripe avocado, fresh cilantro, Greek yogurt, lime juice, minced garlic, and salt.
Blending
  1. In a food processor, combine the shelled edamame, avocado, cilantro, Greek yogurt, lime juice, minced garlic, and salt. Pulse for 30-60 seconds until mostly smooth.
Adjust Flavor
  1. Taste the guacamole and adjust with more salt or lime juice as desired, then blend briefly to incorporate.
Serving
  1. Transfer the guacamole to a serving bowl and use a spatula to smooth the top. Serve immediately or prepare in advance.
