Preparation
  1. Begin by preheating your oven to 425°F (220°C). If you have a pizza stone, place it inside the oven to heat up for extra crispiness.
  2. While your oven heats, take out two baking sheets and arrange your flatbread crusts on them. Lightly dust the baking sheets with cornmeal.
  3. Evenly spread BBQ sauce across each flatbread, leaving a small border around the edges.
  4. Sprinkle shredded Colby Jack cheese generously over the BBQ sauce.
  5. Evenly distribute the diced grilled chicken across the cheese, followed by the chopped bell peppers.
  6. Carefully place the baking sheets in the preheated oven and bake for 12-14 minutes.
  7. Remove the flatbreads from the oven and let them rest for 1-2 minutes before garnishing with thinly sliced green onions.
