Step‑by‑Step Instructions for Huevos Rancheros
  1. In a nonstick skillet, heat your homemade or store-bought salsa over medium heat and simmer for about 5 minutes.
  2. In another medium skillet, pour in the canned black beans along with their liquid. Heat over medium heat for about 8-10 minutes.
  3. Heat 2 tablespoons of vegetable oil in a cast-iron skillet, then fry the corn tortillas for about 30-40 seconds per side.
  4. In the same skillet where you cooked the salsa, reduce the heat to medium and crack the eggs to fry for about 2-3 minutes.
  5. To assemble, place a layer of refried beans on each tortilla, add a fried egg, salsa, and your chosen toppings.
