  • 3 cans White Beans drained and rinsed

  • 4 links Sausages or alternatives like pork shoulder, lamb shanks, or duck confit
  • 1 lb Chicken or Duck whichever is preferred
For the Aromatics
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
For the Sauce
  • 2 cups Tomatoes canned or fresh, roughly chopped
  • 2 tbsp Herbs thyme and bay leaf, fresh or dried
For the Topping
  • 1 cup Breadcrumbs gluten-free breadcrumbs can be used

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your baking dish.
  2. If using dried beans, soak overnight; otherwise, rinse and drain the canned beans.
  3. In a pot, heat olive oil, sauté onions and garlic for 5–7 minutes until translucent.
  4. Add sausages or meat, brown for 8–10 minutes.
  5. Stir in beans, tomatoes, and herbs, then add chicken stock to cover.
  6. Cover and simmer on low for 1.5 hours.
  7. Uncover, adjust seasoning, transfer to baking dish, and sprinkle breadcrumbs on top.
  8. Bake uncovered for 20–25 minutes until topping is golden brown.
  9. Remove from oven, let cool slightly, serve warm.
