Ingredients
  

Batter

  • 1/4 cup Brown Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Ground Cinnamon
  • 1 pinch Salt
  • 2 medium Ripe Bananas Chopped
For Frying
  • 2-3 inches Vegetable Oil Use a high smoke point oil like canola or peanut
For the Glaze
  • 1 cup Powdered Sugar
  • 2 tablespoons Milk For glaze
  • 1/2 teaspoon Vanilla Extract For glaze
  • 1 sprinkle Ground Cinnamon For glaze

Method
 

Combine Wet Ingredients
  1. In a medium mixing bowl, whisk together the eggs, milk, melted unsalted butter, and vanilla extract until well blended.
Mix Dry Ingredients
  1. In another bowl, combine all-purpose flour, brown sugar, baking powder, ground cinnamon, and salt, whisking well to combine.
Combine Mixtures
  1. Gently pour the wet mixture into the dry ingredients and stir until just combined. Fold in the chopped ripe bananas.
Heat Oil
  1. In a deep pot or skillet, heat the vegetable oil to 350°F.
Fry Fritters
  1. Carefully drop spoonfuls of the batter into the hot oil and fry for about 4-5 minutes until golden brown.
Drain Fritters
  1. Remove fried fritters using a slotted spoon and transfer them to a plate lined with paper towels.
