  • 2 large Sweet Onions Yellow or Vidalia varieties are best
  • 2 tablespoons Unsalted Butter For cooking onions
  • 1 teaspoon Fresh Thyme Or dried if fresh is not available
  • to taste Salt
  • to taste Pepper

  • 1/2 cup Cheese Crumble goat cheese or feta

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry to 1/8 inch thick and cut into desired shapes.
  3. Melt butter in a skillet, add sliced onions, and cook with salt and pepper until translucent and golden, about 15 minutes.
  4. Add thyme to the caramelized onions and cook for an additional 2-3 minutes.
  5. Spoon the caramelized onion filling onto the prepared pastry shapes. Optionally, sprinkle cheese on top.
  6. Bake in the preheated oven for 20-25 minutes until puffed and golden.
  7. Cool on the tray for 5 minutes before serving on a platter.
