- Preheat your oven to 180°C (350°F). Gather a baking sheet for later use.
- Lay out four slices of sourdough bread on a clean surface.
- Spread pesto on two slices of bread.
- Layer mozzarella cheese on top of the pesto-covered slices.
- Place prosciutto on top of the mozzarella.
- Top with the remaining two slices of bread and press gently.
- Heat a skillet over medium heat and coat the bottom with olive oil.
- Cook the sandwiches for about 2–3 minutes on each side until golden brown.
- Spread butter on top of each sandwich before transferring them to the baking sheet.
- Bake for an additional 10 minutes until the cheese is bubbling and bread is golden.
- Remove from oven, cool slightly, and slice each sandwich in half.
- Garnish with fresh arugula and sprinkle with salt and pepper.
