Step-by-Step Instructions
  1. Preheat your oven to 400°F (205°C) and prepare two baking sheets lined with parchment paper.
  2. In a medium skillet over medium heat, combine peeled and diced apples, light brown sugar, melted butter, cornstarch, ground cinnamon, and a pinch of salt. Stir constantly for about 5 minutes until thickened and softened. Remove from heat, stir in vanilla extract, and let it cool.
  3. Roll out your pie crust dough on a lightly floured surface to approximately ⅓ inch thick and cut into 4½ inch squares.
  4. Brush edges of each square with egg wash and place 1 tablespoon of cooled apple filling in the center. Fold corners over to create a triangle and crimp edges with a fork.
  5. Brush tops with egg wash and sprinkle with coarse sugar. Cut small slits in the top of each turnover for steam to escape.
