- Preheat your oven to 400°F (205°C) and prepare two baking sheets lined with parchment paper.
- In a medium skillet over medium heat, combine peeled and diced apples, light brown sugar, melted butter, cornstarch, ground cinnamon, and a pinch of salt. Stir constantly for about 5 minutes until thickened and softened. Remove from heat, stir in vanilla extract, and let it cool.
- Roll out your pie crust dough on a lightly floured surface to approximately ⅓ inch thick and cut into 4½ inch squares.
