- Preheat your oven to 400°F (200°C) and line or grease a muffin tin.

- In another bowl, beat the butter and erythritol until fluffy. Blend in the cream cheese until smooth.
- Mix in vanilla extract, then add eggs one at a time, blending well after each addition.
- Fold dry ingredients into wet ingredients, then add melted baking chocolate and mix until smooth.
- Fill muffin cups ¾ full and bake for 5 minutes, then reduce temperature to 350°F (175°C) and bake for 10-15 minutes.
