  • 2 pieces Flatbread Store-bought or homemade
For the Toppings
  • 2 pieces Boneless, Skinless Chicken Breasts Juicy protein source
  • 1/2 cup Basil Pesto Store-bought is fine
  • 1 cup Mozzarella Cheese Shredded
  • 1/4 cup Parmesan Cheese Grated
  • 1 cup Cherry Tomatoes Halved
  • 1/4 cup Fresh Basil Leaves Optional for garnish
For Cooking
  • 1 tablespoon Olive Oil Or another cooking oil
  • to taste Salt Essential seasoning
  • to taste Pepper Essential seasoning

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken breasts with salt and pepper, and optionally some garlic powder or Italian seasoning.
  3. Heat olive oil in a skillet over medium-high heat, then add the seasoned chicken.
  4. Cook the chicken for about 6-7 minutes on each side until fully cooked.
  5. Let the chicken rest for 5 minutes, then slice it into strips.
  6. Lay out flatbreads on a baking sheet and spread basil pesto over them.
  7. Distribute the sliced chicken on the pesto flatbreads and top with mozzarella cheese.
  8. Add halved cherry tomatoes and sprinkle with Parmesan cheese.
  9. Bake in the oven for 10-12 minutes until the cheese is melted and bubbly.
  10. Allow to cool slightly, then garnish with fresh basil leaves before serving.
  11. Slice the flatbreads into serving pieces and enjoy warm.
