Preparation
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and pepper, and optionally some garlic powder or Italian seasoning.
- Heat olive oil in a skillet over medium-high heat, then add the seasoned chicken.
- Cook the chicken for about 6-7 minutes on each side until fully cooked.
- Let the chicken rest for 5 minutes, then slice it into strips.
- Lay out flatbreads on a baking sheet and spread basil pesto over them.
- Distribute the sliced chicken on the pesto flatbreads and top with mozzarella cheese.
- Add halved cherry tomatoes and sprinkle with Parmesan cheese.
- Bake in the oven for 10-12 minutes until the cheese is melted and bubbly.
- Allow to cool slightly, then garnish with fresh basil leaves before serving.
- Slice the flatbreads into serving pieces and enjoy warm.
