Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the eggs, whole milk, salt, black pepper, cayenne pepper, and Dijon mustard.
  3. Grease a 9x13 inch baking dish and layer quartered English muffins at the bottom. Add diced Canadian bacon or ham on top.
  4. Pour the egg mixture evenly over the layers and press down gently.
  5. Sprinkle shredded cheddar cheese on top.
  6. Cover with aluminum foil and bake for 30 minutes. Then remove the foil and bake for an additional 15-20 minutes until golden brown.
  7. Let cool for a few minutes, then drizzle with hollandaise sauce and garnish with chopped chives or parsley.
