Method
 

Preparation

  2. Grate one medium zucchini and press to remove excess moisture.
  3. In a bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
  4. In another bowl, beat together eggs, vegetable oil, and granulated sugar until light and fluffy. Add vanilla extract.
  5. Fold dry ingredients into wet mixture until just combined.
  6. Gently fold in zucchini and chocolate chips into the batter.
  7. Pour batter into the prepared loaf pan, spread evenly, and add more chocolate chips on top if desired.
  8. Bake for 50 to 65 minutes, checking for doneness with a toothpick.
  9. Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
