Preparation
- Preheat oven to 350ºF (175ºC) and prepare a 9x5-inch loaf pan with parchment paper and grease it.
- Grate one medium zucchini and press to remove excess moisture.
- In a bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, and nutmeg.
- In another bowl, beat together eggs, vegetable oil, and granulated sugar until light and fluffy. Add vanilla extract.
- Fold dry ingredients into wet mixture until just combined.
- Gently fold in zucchini and chocolate chips into the batter.
- Pour batter into the prepared loaf pan, spread evenly, and add more chocolate chips on top if desired.
- Bake for 50 to 65 minutes, checking for doneness with a toothpick.
- Let cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
