Step-by-Step Instructions for Dragon Chicken
  1. In a mixing bowl, combine thinly sliced boneless chicken with egg white, cornstarch, salt, and pepper. Mix well and let this marinate for 10-15 minutes.
  2. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to about 350°F. Fry the marinated chicken for 4-5 minutes until golden brown.
  3. In the same skillet, reduce heat and add sesame oil. Sauté minced garlic, ginger, and dried red chilies for 1-2 minutes until fragrant.
  4. Add sauce ingredients: ketchup, soy sauce, chili garlic sauce, vinegar, and sugar. Stir and let simmer for 2-3 minutes.
  5. Add fried chicken back to the skillet and toss in the sauce for 1 additional minute on low heat.
  6. Garnish with sliced green onions and optional sesame seeds. Serve immediately.
