  1. Preheat your oven to 375°F (190°C) and prepare a large baking dish by greasing it lightly with cooking spray or butter.
  2. In a skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the 2 pounds of shrimp with salt and pepper, then sear them for 1-2 minutes on each side until they're just pink and opaque. Remove the shrimp from the skillet and set them aside.
  3. In the same skillet, melt 4 tablespoons of butter over medium heat. Add in the 1/2 cup of finely chopped onion and sauté for about 3-4 minutes until the onion becomes translucent. Stir in the 4 minced garlic cloves, 2 tablespoons of fresh basil, and 1/8 teaspoon of nutmeg, cooking for an additional 30 seconds until fragrant.
