  1. Begin by patting the cod fillets dry with paper towels, ensuring they are free of excess moisture. Season both sides generously with kosher salt and freshly cracked black pepper.
  2. Heat a large skillet over medium-high heat and add a tablespoon of olive oil. Allow the oil to heat until shimmering.
  3. Carefully place the seasoned cod fillets in the hot skillet. Sear for 2–3 minutes on each side until golden.
