Step-by-Step Instructions for Lemon Herb Chicken and Rice
  1. Heat 2 tablespoons of olive oil in a skillet over medium heat until shimmering. Add the diced onion and sauté for 3–4 minutes until softened. Add minced garlic and cook for an additional 1–2 minutes.
  2. Transfer the sautéed onion and garlic mixture to your slow cooker, spreading it evenly.
  3. Lay the chicken breasts on top of the onion and garlic mixture and season with dried thyme, rosemary, lemon zest, salt, and black pepper.
  4. Pour the uncooked long-grain white rice around the chicken, making sure it is distributed evenly.
  5. Pour the chicken broth over the entire mixture, ensuring the rice is submerged.
  6. Sprinkle fresh lemon juice over the top of the chicken and rice mixture.
  7. Cover the slow cooker and set it to cook on low for 3–4 hours or high for 1.5–2 hours.
  8. Once cooking time is complete, remove the chicken, stir in frozen peas, and return the chicken to the slow cooker.
