Method
 

Step-by-Step Instructions
  1. Heat a skillet over medium heat and add a drizzle of olive oil. Add minced garlic and sauté for about 30 seconds until fragrant.
  2. Add chopped fresh spinach to the skillet and cook for 2-3 minutes until wilted. Season with salt, pepper, and dried oregano.
  3. Lay a tortilla flat and add the spinach mixture, crumbled feta, shredded mozzarella, and thinly sliced red onion on one half.
  4. Fold the tortilla in half, pressing to seal the filling inside.
  5. Return the skillet to medium heat, lightly coat with cooking spray or olive oil, and allow to heat.
  6. Cook the folded quesadilla in the skillet for about 2-3 minutes until crispy and golden. Flip and cook the other side for another 2-3 minutes.
  7. Transfer to a cutting board, let rest for 1 minute, then slice into wedges.
  8. Serve warm, optionally with tzatziki or a fresh salad.
