- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the eggplant into one-inch cubes. Toss them with olive oil, salt, and pepper in a bowl.
- Spread the eggplant cubes on the baking sheet evenly and roast for about 20-25 minutes, flipping halfway.
- In a mixing bowl, whisk together the miso paste, mirin, soy sauce, honey, grated ginger, and minced garlic until smooth.
- Remove the roasted eggplant from the oven and brush the miso glaze over the cubes.
- Return the glazed eggplant to the oven and roast for an additional 5-7 minutes until the glaze caramelizes.
- Sprinkle with sesame seeds and sliced green onions before serving.
