For the Eggplant
  • 1 large Eggplant cut into one-inch cubes
  • 2 tablespoons Olive Oil for roasting
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Miso Glaze
  • 1/4 cup White Miso Paste can substitute with red miso
  • 2 tablespoons Mirin or rice vinegar and sugar mix
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Honey or maple syrup
  • 1 teaspoon Fresh Ginger finely grated
  • 2 cloves Garlic minced
Optional Garnishes
  • 1 tablespoon Sesame Seeds for garnish
  • 2 stalks Green Onions sliced for garnish

Method
 

Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the eggplant into one-inch cubes. Toss them with olive oil, salt, and pepper in a bowl.
  3. Spread the eggplant cubes on the baking sheet evenly and roast for about 20-25 minutes, flipping halfway.
  4. In a mixing bowl, whisk together the miso paste, mirin, soy sauce, honey, grated ginger, and minced garlic until smooth.
  5. Remove the roasted eggplant from the oven and brush the miso glaze over the cubes.
  6. Return the glazed eggplant to the oven and roast for an additional 5-7 minutes until the glaze caramelizes.
  7. Sprinkle with sesame seeds and sliced green onions before serving.
