- In a medium mixing bowl, whisk together flour, sugar, baking soda, cinnamon, and salt.
- In a large bowl, beat eggs, then add grated zucchini, vegetable oil, and vanilla extract, mixing well.
- Combine wet and dry ingredients gently, being careful not to overmix. Fold in nuts if desired.
- Divide the batter evenly into prepared loaf pans, filling them about ¾ full.
- Bake for 50 to 60 minutes or until a toothpick comes out clean.
