Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease an 8 x 5 inch loaf pan.
  2. In a small bowl, combine 1/4 cup of brown sugar with 1 teaspoon of ground cinnamon and set aside.
  3. In a large mixing bowl, whisk together 2 large eggs and 1/2 cup of granulated sugar. Stir in 1/2 cup of melted butter and 1 teaspoon of vanilla extract.
  4. Gradually add 1 ½ cups of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and 1/4 teaspoon of salt into the wet mixture.
  5. Fold in 2 cups of chopped apples until evenly distributed.
  6. Pour half of the batter into the prepared loaf pan, sprinkle three-quarters of the cinnamon sugar mixture over it, and top with the remaining batter.
  7. Sprinkle the remaining cinnamon-sugar mixture over the top of the batter and swirl gently with a knife.
  8. Bake for 35-45 minutes, checking for doneness with a toothpick.
