Directions

  3. In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  5. Gradually add the dry flour mixture to the wet batter, mixing gently.
  6. Using a spoon or ice cream scoop, fill each muffin cup to the top with batter and sprinkle the crumb topping.
  7. Bake for 5 minutes at 425°F, then reduce to 350°F and bake for another 15-18 minutes until a toothpick comes out clean.
  8. Allow the muffins to cool for 5 minutes, then transfer to a wire rack. Optional: drizzle with icing if desired.
