Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 24-cup mini muffin pan with non-stick spray or butter.
  2. In a large mixing bowl, combine the fudgy brownie mix, 2 large eggs, ¼ cup of vegetable oil, and ⅓ cup of water. Mix until just combined.
  3. Spoon the brownie batter into the mini muffin pan, filling each cup about two-thirds full. Bake for 12-15 minutes until a toothpick comes out with a few moist crumbs.
  4. Remove from the oven and cool for 10-15 minutes. Use a lightly greased spoon to press the center of each brownie to create a well.
  5. Transfer the brownie bites to a wire rack and let cool completely for at least 20 minutes.
  6. In a medium bowl, beat 1 cup of softened unsalted butter until fluffy. Gradually add 3 cups of powdered sugar, mixing until smooth, then stir in vanilla extract and milk/heavy cream.
  7. Add green gel food coloring to the frosting and mix until the desired shade is achieved.
  8. Spread the green frosting into the indented centers of each brownie and top with a candy eyeball.
  9. Let the decorated brownie bites sit for 30 minutes before serving.
