  1. Grate 2 medium zucchinis and place them in a mixing bowl. Sprinkle with kosher salt and let sit for about 20 minutes.
  2. Squeeze out excess liquid from the zucchini using a clean kitchen towel.
  3. In a separate bowl, mix 1 cup of flour, 1 teaspoon of baking powder, and a pinch of salt.
  4. Whisk 2 beaten eggs, 1 cup of feta cheese, chopped scallions, and mint together. Add zucchini and mix.
