  • 2 cups Buttermilk Substitute with milk mixed with lemon juice or vinegar
For the Coating
  • 2 cups All-Purpose Flour
  • 0.5 cup Cornstarch Can use arrowroot powder as alternative
  • 1 tbsp Salt
  • 1 tbsp Paprika
  • 1 tsp Cayenne Pepper Adjust for spice preference
  • 1 tsp Black Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tbsp Dried Parsley
  • 1 tbsp Dried Basil
  • 2 large Eggs Acts as a binder
For Frying
  • 4 cups Oil for Frying Lard preferred; can use duck fat or peanut oil

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine paprika, salt, cayenne pepper, black pepper, garlic powder, onion powder, dried parsley, and basil. Whisk until blended. Toss the chicken with 1 tablespoon of this seasoning.
  2. In a separate bowl, whisk together buttermilk and eggs until smooth. Pour this mixture over the seasoned chicken and cover. Refrigerate for at least 4 hours, or overnight.
  3. Let the chicken rest at room temperature for 30 minutes. Mix the remaining seasoning with flour and cornstarch. Heat oil in a deep skillet until it reaches 350°F.
  4. Dredge each piece of chicken in the flour mixture, shaking off excess. Fry in hot oil for 10-15 minutes, turning until golden and reached 165°F.
  5. Transfer fried chicken to a wire rack to drain. Allow to rest before serving with your favorite sides.
