Preparation
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the melted butter, milk, vanilla extract, and cinnamon.
- Combine the wet and dry ingredients until just blended.
- Fold in the diced peaches gently.
- In a small bowl, mix together the brown sugar, oats, and cinnamon for the streusel topping.
- Fill muffin cups ¾ full with batter and sprinkle streusel on top.
- Bake for 20-25 minutes, until golden brown.
- Cool in the pan for 5 minutes, then transfer to a wire rack.
