  • 2 tablespoons Vegetable Oil or sesame oil
  • 1 tablespoon Ginger (minced) or horseradish
  • 2 cloves Garlic (minced) or garlic powder
  • 3 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Rice Vinegar or apple cider vinegar
  • 2 tablespoons Szechuan Chili Paste or Asian chili oil
  • 1 tablespoon Hoisin Sauce or barbecue sauce
  • 1 teaspoon Sugar or brown sugar
  • 1 cup Chicken or Vegetable Broth or water
For the Vegetables
  • 100 grams Snow Peas (trimmed) or broccoli, bell peppers
For Garnishing
  • Crushed Peanuts or Sesame Seeds optional

Method
 

Step-by-Step Instructions
  1. Bring a large pot of water to a boil, add dried noodles and cook according to package instructions (7-10 minutes) until al dente. Drain and rinse with cold water.
  2. In a medium bowl, whisk together soy sauce, rice vinegar, Szechuan chili paste, hoisin sauce, sugar, and broth until sugar dissolves.
  3. In a skillet over medium-high heat, add vegetable oil. Once hot, add minced ginger and garlic; sauté for 1-2 minutes until fragrant.
  4. Add snow peas to the skillet and stir-fry for 2-3 minutes until tender yet crisp.
  5. Add the drained noodles and pour the sauce over the top. Toss to combine and heat for an additional 2-3 minutes. Serve garnished with crushed peanuts or sesame seeds if desired.
