- Bring a large pot of water to a boil, add dried noodles and cook according to package instructions (7-10 minutes) until al dente. Drain and rinse with cold water.
- In a medium bowl, whisk together soy sauce, rice vinegar, Szechuan chili paste, hoisin sauce, sugar, and broth until sugar dissolves.
- In a skillet over medium-high heat, add vegetable oil. Once hot, add minced ginger and garlic; sauté for 1-2 minutes until fragrant.
- Add snow peas to the skillet and stir-fry for 2-3 minutes until tender yet crisp.
- Add the drained noodles and pour the sauce over the top. Toss to combine and heat for an additional 2-3 minutes. Serve garnished with crushed peanuts or sesame seeds if desired.
