Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and halve the carrots lengthwise. Toss with olive oil, salt, pepper, and smoked paprika.
  3. Arrange the carrots cut-side down on the baking sheet and roast for 25 to 30 minutes, flipping halfway through.
  4. In a food processor, blend the ricotta cheese, cream, olive oil, and lemon zest until smooth and airy.
  5. In a saucepan, warm honey, stir in red pepper flakes, and let simmer for 3 to 4 minutes. Then stir in apple cider vinegar.
  6. Spread the whipped ricotta on a platter, top with roasted carrots, and drizzle with hot honey. Serve warm.
