- Preheat your oven to 250°F (120°C). Separate five heads of garlic into individual cloves and peel them. Discard any cloves that show green sprouts.
- Lay out the peeled garlic in an oven-proof dish. Sprinkle with fine sea salt. Add thyme and red pepper flakes if desired. Pour enough olive oil over the garlic to submerge it completely. Cover tightly with aluminum foil.
- Place the covered dish in the oven and bake for 60 to 90 minutes, checking for doneness after an hour.
- Once cooked, let the garlic cool in its oil for 15-20 minutes at room temperature.
- Transfer the garlic confit into a clean, airtight container, submerging the garlic cloves completely with the oil. Store in the refrigerator.
