- Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente, then drain.
- In a large skillet, heat olive oil over medium heat. Add sliced Salsiccia, breaking apart. Sauté for 5-7 minutes until browned.
- Add chopped fresh tomatoes to the skillet and cook for about 5 minutes until softened, adding reserved pasta water if needed.
- Add the drained pasta to the skillet and toss until well-coated, adding more pasta water for desired sauciness.
- Season with chili flakes and sugar or honey, adjusting to taste. Cook over low heat for another minute.
- Remove from heat and drizzle more olive oil over the pasta. Garnish with basil or parsley and Parmesan before serving.
