Shrimp Ingredients
  • 1 lb Shrimp peeled and deveined
  • 2 teaspoons Olive Oil for cooking
  • 1 teaspoon Cayenne Pepper for spice
  • 1 teaspoon Lime Juice for flavor
Mango Salsa Ingredients
  • 1 cup Mango diced
  • 1/2 cup Red Onion diced
  • 1 ear Corn grilled and sliced off the cob
  • 1 tablespoon Cilantro chopped
  • 1 teaspoon Salt
Taco Assembly Ingredients
  • 8 small Taco Shells corn or flour
  • 1 cup Lettuce shredded
  • 1 cup Sour Cream for topping

Method
 

Cooking Shrimp
  1. Heat olive oil in a pan over medium heat. Add shrimp, cayenne pepper, and lime juice. Cook until shrimp turn pink, about 5-7 minutes.
  2. Remove from heat and set aside.
Making Mango Salsa
  1. In a mixing bowl, combine diced mango, red onion, corn, cilantro, and salt. Mix gently.
Assembling Tacos
  1. In each taco shell, layer shredded lettuce, cooked shrimp, and top with mango salsa.
  2. Add a dollop of sour cream on top and serve.
