Ingredients
  

For the Chicken
  • 2 pieces Chicken Breasts Marinate for at least 30 minutes before grilling.
For the Corn
  • 1 cup Corn Kernels Fresh corn preferred; canned or frozen can be used.
For the Tacos
  • 4 pieces Tortillas Soft flour or corn tortillas.
  • 0.5 cup Queso Fresco Substitute with feta or cotija if needed.
For the Sauce
  • 0.5 cup Mayonnaise Greek yogurt can be used as a lighter option.
  • 2 tablespoons Lime Juice Freshly squeezed is recommended.
For Garnish
  • 0.25 cup Cilantro Parsley can be used as a substitute.
  • Seasonings (Salt & Pepper) Customize to taste.

Method
 

Grilling and Assembling
  1. Preheat the grill to medium-high heat (around 375°F). Pat chicken breasts dry and season with salt and pepper.
  2. Grill chicken for 6-7 minutes on each side until cooked through (internal temperature 165°F). Let rest for 5 minutes.
  3. Sauté the corn in olive oil over medium heat for 5-7 minutes until slightly caramelized.
  4. Mix mayonnaise and lime juice in a bowl, adjusting seasoning as necessary to create the sauce.
  5. Slice the grilled chicken, warm the tortillas, layer chicken and corn, top with queso fresco and drizzle sauce.
  6. Garnish with cilantro and serve immediately with lime wedges.
