Grilling and Assembling
- Preheat the grill to medium-high heat (around 375°F). Pat chicken breasts dry and season with salt and pepper.
- Grill chicken for 6-7 minutes on each side until cooked through (internal temperature 165°F). Let rest for 5 minutes.
- Sauté the corn in olive oil over medium heat for 5-7 minutes until slightly caramelized.
- Mix mayonnaise and lime juice in a bowl, adjusting seasoning as necessary to create the sauce.
- Slice the grilled chicken, warm the tortillas, layer chicken and corn, top with queso fresco and drizzle sauce.
- Garnish with cilantro and serve immediately with lime wedges.
