Step-by-Step Instructions
  1. Season chicken breasts with salt and pepper, and sear in olive oil over medium-high heat for 6-7 minutes on each side. Remove and let cool.
  2. Melt butter in the same skillet, sauté mushrooms, shallots, and garlic until moisture evaporates and mixture is paste-like (10-12 minutes). Remove from heat and cool.
  3. On plastic wrap, lay out prosciutto, cover with duxelles, place chicken on top, and roll tightly. Chill for 15-20 minutes.
  4. Preheat oven to 400°F (200°C). Roll out puff pastry, place chicken roll in center, seal edges, and chill for an additional 10 minutes.
  5. Beat egg yolk with a splash of water, brush over pastry, and cut slits for steam venting.
  6. Bake on a parchment-lined baking sheet for 25-30 minutes until pastry is golden and chicken reaches 165°F (74°C). Rest for 5 minutes before slicing.
