Method
 

Step-by-Step Instructions
  1. Pat chicken breasts dry and season with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet and sear the chicken for about 3 minutes on each side.
  3. Layer sliced onion and minced garlic in the crockpot.
  4. Place the seared chicken on top of the onions and garlic.
  5. Whisk together chicken broth, soy sauce, honey, mustard, and thyme, then pour over the chicken.
  6. Cover and slow cook on low for 6-7 hours or high for 3-4 hours.
  7. Remove chicken and keep warm, then prepare the sauce.
  8. Mix cornstarch with water and add to the remaining liquid in the crockpot to thicken.
  9. Return chicken to the crockpot or serve on a platter with thickened sauce poured over.
