  1. In a stand mixer, combine 4 cups of bread flour, 1 tablespoon of salt, and 2 teaspoons of instant yeast. Pour in 1⅔ cups of warm water and mix on low speed until a sticky dough forms, approximately 8 to 10 minutes.
  2. Transfer the dough to a greased bowl, cover with a kitchen towel, and let it rise in a warm place until it doubles in size, about 2 hours.
  3. While the dough is rising, grease a Detroit-style pizza pan generously with olive oil. Once the dough has risen, gently punch it down and stretch it into the prepared pan.
  4. Preheat your oven to 500°F (260°C) for a perfect crispy crust.
  5. After the dough has relaxed, stretch it to fill the edges of the pan, layer shredded Jack cheese against the edges, dollop your sauce over the cheese, and distribute pepperoni on top.
