For the Meatballs

  • 1 cup Breadcrumbs Adjust based on chicken moisture.
  • 1 large Egg Can use a flax egg for vegan.
  • 2 cloves Garlic Minced, fresh garlic is best.
  • 0.25 cup Red Onion Finely chopped.
  • 2 tbsp Parsley Fresh, chopped.
  • 1 tbsp Dill Fresh, chopped; can use dried.
  • 1 tsp Lemon Zest Freshly grated for best flavor.
  • 0.5 tsp Salt Adjust to taste.
  • 0.25 tsp Black Pepper Adjust to taste.
  • 1 tbsp Olive Oil For meatball richness.
For the Tzatziki
  • 1 cup Greek Yogurt Use dairy-free for vegan.
  • 0.5 medium Cucumber Grated and drained.
  • 1 tbsp Lemon Juice Freshly squeezed.
  • 1 tbsp Chopped Dill More can be added for flavor.
  • pinch Salt Adjust to taste.
  • 1 tbsp Olive Oil For flavor and creaminess.

Method
 

Prepare Meatballs
  1. In a large mixing bowl, combine ground chicken, breadcrumbs, egg, minced garlic, chopped onion, parsley, dill, lemon zest, salt, and black pepper. Mix until just combined.
  2. Form the mixture into 1.5-inch meatballs and place them on a parchment-lined baking sheet.
  3. Drizzle olive oil over the meatballs. Preheat oven to 400°F (200°C) and bake for 18-20 minutes.
Prepare Tzatziki
  1. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, chopped dill, and pinch of salt. Stir to combine.
  2. Let it chill in the refrigerator for at least 15 minutes.
Serve
  1. Serve warm meatballs with tzatziki sauce for dipping or drizzling.
