Method
 

Preparation
  1. In a large bowl, mix together olive oil, fresh lemon juice, minced garlic, dried oregano, rosemary, red pepper flakes, salt, and pepper to create a marinade.
  2. Add the chicken thighs and diced red potatoes, ensuring they are coated. Cover and marinate in the refrigerator for at least 30 minutes.
  3. Preheat your oven to 450°F (232°C). Prepare a lined baking sheet for easy cleanup.
  4. Remove the marinated chicken and potatoes, placing them on the baking sheet. Pour remaining marinade over top and drizzle with white wine.
  5. Bake for about 40 minutes until chicken is golden brown and reaches a temperature of 165°F (74°C).
  6. Let the chicken rest for a few minutes before garnishing with chopped herbs.
