Ingredients
  

For the Meatballs
  • 1 lb Ground Beef or substitute with ground lamb
  • 3 cloves Garlic minced
  • 1 medium Onion finely chopped
  • 1 cup Breadcrumbs use gluten-free breadcrumbs if desired
  • 1 tsp Baking Soda
  • 1 bunch Fresh Herbs (parsley, mint, coriander) chopped
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Black Pepper
For the Roasted Potatoes
  • 4 medium Potatoes cut into wedges
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Dried Oregano
For the Tzatziki
  • 1 cup Thick Greek Yogurt or dairy-free yogurt for vegan option
  • 1 medium Cucumber grated and drained
  • 2 tbsp Lemon Juice
  • 1 tbsp Fresh Dill or Mint chopped
For the Salad Components
  • 4 cups Crisp Lettuce Leaves
  • 1 cup Tomatoes chopped
  • 1 cup Cucumbers sliced
  • 1 small Red Onion sliced
  • 1/2 cup Kalamata Olives pitted
  • 2 tbsp Extra Olive Oil for dressing
  • 2 tbsp Lemon Juice for dressing

Method
 

Meatball Preparation
  1. In a large mixing bowl, combine ground beef, minced garlic, finely chopped onions, breadcrumbs, baking soda, and fresh herbs. Add olive oil, salt, and black pepper. Mix thoroughly and refrigerate for at least 2 hours.
Cooking Meatballs
  1. Preheat oven to 425°F (220°C). Shape chilled meat mixture into small meatballs. Bake on a baking sheet drizzled with olive oil for 10-15 minutes until golden brown.
Roasting Potatoes
  1. Cut medium potatoes into wedges. Toss with olive oil, salt, cumin, paprika, and dried oregano. Roast at 425°F (220°C) for 40-60 minutes.
Making Tzatziki Sauce
  1. Mix thick Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill or mint in a bowl. Refrigerate until ready to serve.
Assembling the Bowl
  1. Layer chopped lettuce in bowls. Add roasted potato wedges, meatballs, and salad ingredients. Drizzle with tzatziki and garnish with herbs.
