  • 1 lb Fresh Salmon Skinless, wild-caught preferred
  • 1 cup Breadcrumbs Can use seasoned varieties
  • 1 large Egg Fresh
  • 2 tbsp Fresh Herbs Dill or parsley, chopped
  • 1 tbsp Lemon Juice Freshly squeezed
For the Creamy Avocado Sauce
  • 2 medium Avocado Ripe
  • 1 cup Greek Yogurt Plain, for best flavor
  • 1 tsp Garlic Powder
  • to taste Salt For seasoning
  • to taste Pepper For seasoning

Method
 

Preparation and Baking
  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Flake the fresh salmon into fine pieces in a large mixing bowl.
  3. Add breadcrumbs, the large egg, chopped herbs, lemon juice, garlic powder, and season with salt and pepper. Mix gently until combined.
  4. Wet your hands and shape spoonfuls of the mixture into 1-inch balls, placing them on the prepared baking sheet.
  5. Bake for 20-25 minutes until golden brown.
  6. In a blender, combine avocados, Greek yogurt, lemon juice, salt, and pepper to make the creamy avocado sauce.
  7. Serve warm salmon balls with the avocado sauce for dipping.
