Preparation Steps
  1. Begin by dicing the skinless salmon into small, even pieces about 1 inch (2.5 cm) wide. Place the diced salmon in a chilled mixing bowl.
  2. In a separate bowl, whisk together the vinegar, water, and olive oil. Add lemon juice and mustard, mixing until well combined. Stir in shallots and capers, and adjust with Tabasco sauce.
  3. Pour the dressing over the chilled salmon, ensuring each piece is coated. Sprinkle in chives and parsley, then gently toss together.
  4. Place the bowl over ice again and let it chill for about 10-15 minutes.
