For the Potatoes
  • 4 large russet potatoes Can substitute with sweet potatoes.
For the Filling
  • 8 oz cream cheese Can use low-fat cream cheese.
  • 1 cup crawfish tails Substitute with lump crab meat if necessary.
  • 1 cup raw shrimp Feel free to use flaky white fish.
  • 1 tbsp Cajun seasoning Adjust to heat preference.
  • 2 cloves minced garlic Fresh garlic preferred.
For the Cheese Sauce
  • 2 tbsp butter Can substitute with olive oil.
  • 2 tbsp flour Cornstarch can be a gluten-free alternative.
  • 1 cup half and half Milk and cornstarch can replace for fewer calories.
  • 2 cups mixed cheeses Blend of American, mozzarella, Monterey Jack, and Parmesan.
For Garnishing
  • 2 tbsp chives/green onions Optional for garnish.

Method
 

Preparation Steps
  1. Preheat oven to 400°F (200°C). Scrub the potatoes and poke holes in them. Bake for 40-50 minutes until tender.
  2. Once cool, cut the tops off each potato and scoop out the insides. Add cream cheese, garlic, salt, and pepper to the scooped flesh and mash until smooth.
  3. In a skillet, melt a tablespoon of butter and sauté shrimp and crawfish with Cajun seasoning for 4-5 minutes until cooked.
  4. Make a cheese sauce by melting remaining butter, whisking in flour, then adding reserved seafood liquid and half-and-half until thickened. Stir in cheeses until melted.
  5. Fill potato skins with the creamy mixture, top with seafood, and pour the cheese sauce over each potato.
  6. Broil the stuffed potatoes for 2-3 minutes until the cheese is bubbly and golden brown.
  7. Garnish with chives or green onions before serving.
