  • 2 cups cabbage chopped; bok choy or napa cabbage work well
  • 1 cup carrots sliced; zucchini or bell peppers can replace
  • 1 tsp red pepper flakes optional, adjust based on preference
For Garnishing
  • 1 tbsp toasted sesame seeds or sunflower seeds for nut-free
  • 2 tbsp fresh cilantro optional; green onions work too

Method
 

Step-by-Step Instructions
  1. Start by draining and pressing the tofu to remove excess moisture. Cut the tofu into bite-sized cubes and marinate in a mixture of soy sauce and sesame oil for about 10 minutes.
  2. In a small bowl, combine 2 tablespoons of soy sauce, minced garlic, grated ginger, and sesame oil to create the stir-fry sauce.
  3. Heat a large pan over medium-high heat. Add sesame oil and marinated tofu. Sauté for 5-7 minutes until golden brown and crispy.
  4. In the same pan, add sliced carrots and chopped cabbage. Stir-fry for 3-5 minutes until tender-crisp.
  5. Return the tofu to the pan and pour the stir-fry sauce over. Toss gently and cook for an additional 2-3 minutes.
  6. Serve hot, garnished with toasted sesame seeds and cilantro. Enjoy on its own or over cooked rice, quinoa, or noodles.
