Method
 

Preparation Steps
  1. Peel, slice, and dice the pear, tossing with lemon juice to prevent browning. Set aside.
  2. Heat a large skillet over medium heat, add diced pancetta and cook for about 5–7 minutes until crispy.
  3. Remove pancetta and drain on paper towels while reserving 3 tablespoons of rendered fat in the skillet.
  4. In the same skillet, add shallots and sauté for 3–4 minutes until softened. Stir in Dijon mustard.
  5. Add frozen peas and diced pear, stirring and cooking for about 5 minutes until heated through.
  6. Remove from heat, mix in half of the pancetta, parsley, and black pepper. Transfer to a serving bowl and garnish with remaining pancetta and lemon zest.
