Preparation Steps
- Peel, slice, and dice the pear, tossing with lemon juice to prevent browning. Set aside.
- Heat a large skillet over medium heat, add diced pancetta and cook for about 5–7 minutes until crispy.
- Remove pancetta and drain on paper towels while reserving 3 tablespoons of rendered fat in the skillet.
- In the same skillet, add shallots and sauté for 3–4 minutes until softened. Stir in Dijon mustard.
- Add frozen peas and diced pear, stirring and cooking for about 5 minutes until heated through.
- Remove from heat, mix in half of the pancetta, parsley, and black pepper. Transfer to a serving bowl and garnish with remaining pancetta and lemon zest.
