Step-by-Step Instructions for Vegan Taquitos
  1. Preheat the oven to 425°F (220°C) and gather all ingredients.
  2. In a non-stick pan, heat olive oil and sauté diced red onion and minced garlic for about 3 minutes.
  3. Add diced Roma tomato, jalapeño, frozen corn, grated extra firm tofu, and black beans; cook for 5 minutes until aromatic.
  4. Lower heat, mix in vegan yogurt, lime juice, and salsa until well combined.
  5. Fill corn tortillas with the mixture, roll tightly, and place seam-side down in a baking dish.
  6. Bake for 12-15 minutes until golden brown and crisp.
  7. Remove from oven, let cool slightly, and serve with toppings.
