Step-by-Step Instructions
  1. In a large, deep skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add 1 finely chopped onion, 1 grated carrot, and 1 finely diced celery stalk. Sauté for about 5-7 minutes until softened.
  2. Stir in a mix of 1 pound of ground beef and ground pork. Cook for around 5-7 minutes until browned.
  3. Pour in ½ cup of white wine, stirring to deglaze the pan and scrape up browned bits. Simmer for 3-5 minutes.
  4. Lower the heat and stir in 1 cup of milk or heavy cream, and a pinch of freshly grated nutmeg. Simmer for 30-45 minutes, stirring occasionally.
  5. Stir in ½ cup of freshly grated Parmesan cheese until melted.
  6. Spoon the sauce over your favorite pasta and serve immediately.
