- Boil the udon noodles according to package instructions, typically around 8–10 minutes. Drain and rinse under cold water.
- In a large pan, heat 1 tablespoon of oil over medium heat. Add minced garlic and sauté for about 1 minute.
- Add sliced mushrooms and cook for 2-3 minutes before adding onions and carrots for another 2-3 minutes.
- Remove vegetables from pan. Add 2 tablespoons of oil to the pan, and cook shrimp for 2-3 minutes until pink.
- Pour in soy sauce and a pinch of salt, allowing flavors to meld for another minute.
- Stir-fry noodles with shrimp on high heat for 2-3 minutes.
- Add sauce and vegetables, tossing for 1-2 minutes until well-coated.
- Garnish with chopped spring onions and serve immediately.
