Preparation
- Season the chicken breasts generously with salt and pepper, ensuring all sides are coated evenly.
- In a medium skillet over medium heat, pour in a splash of olive oil. Add the minced garlic, sautéing for 1-2 minutes until fragrant.
- Transfer the seasoned chicken to the slow cooker. Pour the sautéed garlic over it, followed by the balsamic vinegar and fig jam.
- Cover the slow cooker and set it to cook on low for 4-6 hours.
- About 15 minutes before serving, remove the lid and sprinkle crumbled goat cheese over the chicken.
- Carefully remove the chicken from the slow cooker and plate. Drizzle generously with the sauce.
