  • 4 pieces Boneless, Skinless Chicken Breasts Turkey can be a substitute.
  • 1 tablespoon Olive Oil Any neutral oil is acceptable.
For the Sauce
  • 1 cup Fig Jam Ensure it's gluten-free.
  • 1/4 cup Balsamic Vinegar Red wine vinegar can be used as a substitute.
  • 4 cloves Minced Garlic Fresh garlic is preferred.
For the Finish
  • 4 ounces Goat Cheese Feta or blue cheese can be alternatives.
  • 2 teaspoons Fresh Thyme Dried thyme can be used if fresh isn't available.

Method
 

Preparation
  1. Season the chicken breasts generously with salt and pepper, ensuring all sides are coated evenly.
  2. In a medium skillet over medium heat, pour in a splash of olive oil. Add the minced garlic, sautéing for 1-2 minutes until fragrant.
  3. Transfer the seasoned chicken to the slow cooker. Pour the sautéed garlic over it, followed by the balsamic vinegar and fig jam.
  4. Cover the slow cooker and set it to cook on low for 4-6 hours.
  5. About 15 minutes before serving, remove the lid and sprinkle crumbled goat cheese over the chicken.
  6. Carefully remove the chicken from the slow cooker and plate. Drizzle generously with the sauce.
