Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Bring a large pot of salted water to a boil, then add fresh carrots and cook for 10–12 minutes until fork-tender.
  3. Transfer boiled carrots to the baking sheet and smash each carrot gently with a flat-bottomed object.
  4. Drizzle olive oil over smashed carrots and sprinkle with garlic powder, smoked paprika, salt, black pepper, and Parmesan cheese.
  5. Roast the carrots for 20–25 minutes, flipping halfway through for even crispness.
  6. Remove from oven, garnish with fresh parsley, and serve immediately.
