Method
 

Preparation
  1. Wash and dry the cucumbers thoroughly; slice them in half lengthwise and smash gently with a knife, then chop into 1-inch pieces.
  2. In a large mixing bowl, add the chopped cucumbers, diced avocado, crumbled feta, chopped pistachios, dill, and chives, then toss gently.
  3. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
  4. Pour the dressing over the salad and toss gently until all ingredients are coated.
  5. Transfer the salad to a serving platter and garnish with fresh herbs or extra feta, then serve immediately.
