- In a large bowl, cream together butter, sugar, and salt until light and fluffy, about 5-7 minutes. Beat in the egg, followed by the orange zest, orange juice, and lemon extract. Gradually mix in the flour until incorporated. Divide dough in half, shape into disks, wrap in plastic, and chill for at least 1 hour.
- Preheat your oven to 375°F (190°C). After dough is firm, roll each disk to 1/4 inch thick. Cut out shapes and place on greased baking sheets, spacing them 1 inch apart.
- Bake cookies for 8-10 minutes until edges are golden and centers remain soft. Allow to cool on sheets for a few minutes before transferring to wire racks to cool completely.
- In a small bowl, whisk together confectioners’ sugar, milk, and optional food coloring until smooth. Adjust consistency with more milk if needed.
- Once cookies are cooled, drizzle or spread icing on top. Allow icing to set for at least 30 minutes before serving.
